When I decided to embark on trying to eat a bit healthier, I was very keen to ensure I ate interesting foods. Being a foodie, I really wasn’t trying to suffer myself! In my quest for recipes I happened upon a really easy breakfast dish which I was totally excited about because if you know me, you’ll know that breakfast is my absolute favourite meal of the day!
Banana pancakes made with oat flour are literally one of the easiest things I’ve ever made! Don’t get put off by the banana as while they definitely do taste of the fruit, it’s not as overpowering as you would expect, like in a banana milkshake for example (which I hate by the way). Oat flour is derived from the normal easy quick quaker oats that we all have in our cupboards, so the recipe really a great way to use bananas which are on the wrong side of ripe. Super filling, yummy AND healthy? What more can I say, try them for yourself.
Healthy Banana Pancake Recipe
- 2 bananas
- 2 eggs
- ½ cup rolled oats
- ½ teaspoon baking pwoder
- pinch of salt
- maple syrup or honey, to serve
- fresh fruit of your choice, to serve
In a blender, combine the peeled banana, eggs, oats, baking powder and salt.
Allow to blend until the mixture is as smooth as you want it and blended well. Allow the batter to stand for 10-20 minutes until thickened slightly.
Heat a non-stick frying pan over medium heat.
Fry spoonfuls of the batter until golden brown on both sides.
Serve with a drizzle of maple syrup and fresh fruit of your choice. I usually eat mine with blueberries and lightly toss the blueberries in a hot pan for a few minutes to make them warm and juicy!
